Creamy Tomato Soup From Your Food Storage
1 min readThis has to be the easiest meal in a jar you can possible prepare. It calls for 5 basic ingredients and only 4 cups of boiling water to make. If you are going to make a few of these up to store in your food storage then use pint size jars with O2 absorbers or vacuum seal your jar to remove all air. ( You will need this attachment to vacuum seal a jar.) This recipe is so easy to make that even the kids can do it. (Video below)
Makes four 1 cup servings or two 2 cup servings

- Stir and turn down heat to a simmer
- Simmer 8-10 minutes or until it is the consistency you like
Serve alone or with grilled cheese! I like to top ours with cheese just before serving. 🙂
There’s also whole milk in a can for those who prefer it. It’s called Nido and it is in most grocery stores, including Wal-Mart. It’s made by Nestle. I have loved making tomato powder from the 15 lbs. of tomatoes I can buy for $5 at a local farm stand. It’s for soup, instant tomato paste, a thickener for vegetable soups, Italian sauces, a base for ketchup (I make a terrific sugar-free ketchup for hubby, and it tastes like the most popular brand, too! Swears!) I chop and dehydrate the tomatoes to a crispy stage, then powder them in my Nutribullet in seconds. It’s so great to have on hand that I never want to be without it, and I never have to have tiny packets of tomato paste in my freezer, either, which just get lost or too old to use. I’m doing the same with canned jalapenos in adobo, and for the same reasons.
Thank you for sharing this recipe. I have a question. How do you store tomato powder after opening up the can and keep it from crystalizing? My powder has gotten rock hard since I opened the can.
