1 min readI threatened you all a few weeks ago, and today we will be talking about making your own extracts.
Extracts are very simple to make, and you can use just about any herb you love.
Take your fresh herbs ( don’t have fresh herbs? Powder up your dried ones) Using a large glass Mason Jar, place your herbs inside and pour Vodka or your high octane moonshine over top.
You want a ratio of 1 part herb and 5 parts alcohol for the powdered herbs, or 1 part herbs to 3 parts alcohol. Place a plastic baggy or just plastic wrap over the jar mouth, then tightly secure the lid and shake.
Place the jar in a dark place and allow to sit for 4-6 weeks, then strain. (cheesecloth works well) Squeeze the cloth well, get as much as the liquid out as possible. Place into another jar and store in a cool dark place. This keeps well ( full flavor) for 3-5 years.
As for your fruit extracts, the above applies. Stop throwing out those peelings, instead, throw them into a jar of vodka or rum. Keep adding to it through-out the month. At the end of the month, remove all the old peelings, add new ones and vodka as you use it.
